    Vinification: Manual harvest, total destemming without crushing. 25 days of maceration including 5 cold

    Ageing: 12 months in French oak barrels

    Terroirs: clayey-silty soil and Gravette de Corconne (angular gravel)

    Food / Wine: For a lamb or chicken tagine with a spicy and spicy sauce.
